Melanzane alla Parmigiana 🍆🧀🇮🇹
It’s a lasagna’s veggie cousin and she’s showing off 😍

Ingredients:
▢ 2 large eggplants (about 1.5 lbs / 700g)
▢ 1.5 lbs (700g) tomato passata (smooth or chunky)
▢ 1 white onion
▢ A small bunch of basil
▢ 8.8 oz (250g) mozzarella, cubed
▢ ¾ cup (70g) grated Parmigiano Reggiano
▢ ½ tbsp olive oil
▢ Flour for dusting
▢ Sunflower oil for frying (about ½ cup / 125ml)
▢ Salt and pepper

🍆🍅🧀

Instructions:

1. Thinly slice the eggplants, salt them, and let them rest in a colander for 1 hour.

2. Meanwhile, sauté chopped onion in olive oil, add passata, basil, salt & pepper. Simmer for 10–15 min.

3. Rinse & dry eggplant slices, dust with flour, and lightly fry until golden.

4. In a baking dish, layer: sauce → eggplant → parm → mozzarella → repeat.

5. Top with the remaining sauce and cheeses. Cover with foil and bake at 350°F (180°C) for 20 min, then uncover and bake for 20 min more until bubbly and golden.

6. Rest 5 minutes before serving.
